I'm still in love.......

to be able to do cakes as good as my daughter. I'm working on it.

Lemon Blueberry Cupcakes with Lemon Cream Cheese Frosting

I was using an untested recipe for these cupcakes. They tasted really good and have a nice lemony aftertaste. I learned that adjustments are going to have to be made to the frosting recipe as it came out a bit thinner than I'd like it to be. I could have firmed it up more before frosting but I thought it was going to be fine. Overall flavor=7 Ease of making = 9  Overall 7-8   on the 10 scale.

Love to cook....

but I think I love to bake more. After completing my French Pastry class and cake decorating class I've come to the decision that I'm a much better baker. Don't get me wrong I still like to make a nice meal, something different, but what's a good meal without a great desert to follow it up with?
 Made Black Forest cupcakes today with cherry/cream cheese filling and whipped cream topping with shaved chocolate and a maraschino cherry. Every one that had one loved them. Besides who doesn't love dessert?

cheese cake!

This cheesecake is probably the lowest fat and sugar content possible. It is made with low fat cream cheese and 3/4 cup sugar (doesn't include the topping.) You could use fat free cream cheese. The one here is caramel marbled with caramel, chocolate and slivered almonds on top.

Visiting Utah was definitely one of the highlights of our 14 week trip throughout the USA. Next time we go to Utah we are going to plan on staying a full two weeks. There are so many more things we want to do and see.
